Pumpkin Pie

PUMPKIN PIE

Ingredients:


½ cup all-purpose flour (lightly browned in frying pan)
½ tsp salt
1 tsp vanilla
1 Tbsp pumpkin pie spice
1 cup Silk creamer
1 cup pure maple syrup
1 large can pumpkin (use pure pumpkin; not pre-seasoned)


Directions:


Blend all ingredients together except pumpkin. Pour into bowl and mix in pumpkin. Pour into 2 unbaked pie crusts. Bake at 350 degrees for 60 minutes. Crust (for two pies)


Ingredients:


1 ½ cups whole wheat pastry flour

1 cup all-purpose flour

½ tsp salt ½ cup olive oil

½ cup cold water


Directions:


Mix flours and salt. Whisk cold water into oil until emulsified. Pour oil and water mixture into dry mixture. Stir quickly with fork. Divide dough into two balls and roll out. Or can purchase whole wheat pie crusts.
